Pumpkin Spice Caramelised Fruit

Oh, wow! This one will makes you really cosy and happy! It’s all about some sweetness this fall, right??
It’s so hard to explain how tasty they are… Just no words. You should try yourself. This sweetness and spicy taste are great entrance for fall season. Of course, it’s indulged recipe so it’s not low in calories but I used better version of sweetener so its much healthier than other caramelised fruit recipes. I also use Pumpkin Pie Spice Mix, so you’ll have extra nutrition from this recipe.

Few words before start…

This recipe is very simple but you’ll need non-stick frying pan. I share this recipe for two portions but you can easily swap for one portion by reducing ingredients or swap to make more by adding ingredients. Just keep the ratio.

About bananas… you want to chop them in a thick pieces. Thin pieces don’t fry too good.

About blueberries… add them last because they are frying faster than bananas and walnuts.

About walnuts… You can fry them whole but I prefer smaller pieces and this is why I crack them using my hands.

You can serve these pumpkin spices caramelised fruit with plant based yoghurt, porridge, smoothie bowls and pancakes.

HOW TO MAKE PUMPKIN SPICE CARAMELISED FRUIT

 

INGREDIENTS:

  • 2 bananas, finally chopped
  • 1 flat tbsp coconut oil
  • 2 handful blueberry (about 125g)
  • 2 handful walnuts (about 60g), finally crushed
  • 2tbsp coconut sugar
  • 2tbsp agave syrup
  • 1tbsp pumpkin pie spice mix

 

METHOD:
Place a frying pan with the coconut oil, coconut sugar, agave syrup and pumpkin pie spice mix over a high heat until is hot and bubbling. Add chopped banana and crushed walnuts and stir them for about 2 minutes to make sure, they are fully coated in caramel. Than add blueberries and stir again for another 2 minutes. Serve them with fresh yoghurt, pumpkin porridge, smoothie bowls or pancakes. Enjoy!
