Purple Sweet Potato Porridge
Who doesn’t like comfy breakfast? Fall season is already start and warming breakfast in the morning is very comforting. Recipe is very simple and fast to do. Colour is absolutely beautiful. It taste just a little bit different but it’s remind me about baby food my mum give me when I was young and it’s delicious.
Some words about ingredients:
Breakfast oats – there is so many different kinds of oats. I use breakfast oats. You can find them also gluten free. I use them because they cook faster and they are creamier after cooking than rolled oats. Please note that if you use different oats time cooking can be vary.
Purple sweet potato puree – recipe is here . You can use sweet potato instead purple sweet potato but taste, colour and nutrition will be different.
Toppings – you can use any toppings you like it! Honestly my favourite are fresh berries but I also like porridge with warm raspberry sauce .
Sweetener – I love my porridge sweet. Too be honest purple sweet potato puree doesn’t make the porridge sweet so I used agave syrup. You can use any sweet syrup you like it.
Few words about colour:
When you add the purple sweet potato puree to the porridge it turning purple but if you add to much milk the colour will turning blue. Too be honest it doesn’t matter. The taste will be still delicious. I just wanted to mention it so that you would know. My porridge is purple because I cook it with water and small amount of milk. If you want to cook your porridge only with milk and you want it to be purple you can add more purple sweet potato puree .

INGREDIENTS:
Porridge:
* 60g oats (I used breakfast oats)
* 200ml water
* 30ml plant based milk (I used oat milk)
* 1 large tbsp purple sweet potato puree
Toppings:
* banana, finally sliced
* few strawberries, finally chopped
* handful blueberries
* 1tsp coconut shreds
* agave syrup
METHOD:
Put the oats with water in a sauce pan and mix. Add the purple sweet potato puree and milk and mix together again. Put the sauce pan over medium heat. Cook the porridge for few minutes, stirring until it thickens. Pour the porridge into a bowl and decorate with your toppings! Enjoy!
