Creamy Pumpkin Porridge

Ready for some pumpkin? This one makes you really happy. This creamy pumpkin porridge is super creamy because of pumpkin and coconut milk. Caramelised fruit on top gives so many sweetest and fresh berries gives zest and almost forgot about fresh crushed walnuts which gives you all fall vibes.

Few words about ingredients…

Oats – I used breakfast oats, they cook faster than rolled oats. There is a lot of different kinds of oats so be aware, if you use different than I used you can cook longer or shorter. Rolled oats needs to cook more so add as much water as need and cook until they are soft and creamy, than add milk.

Pumpkin pure – you can find the recipe here . You can use frozen pumpkin puree for this recipe just defrost it before adding to oats.

Thick coconut milk from can – it makes your porridge super creamy and rich. You don’t want to skip this ingredient. You’ll need just 1tbsp for this recipe. The rest of thick coconut milk you can transfer from can to an airtight container and keep in the fridge for about 3 days.

Toppings – be creative! Use anything you like! Honestly for me the best are caramelised fruits with fresh berries and crushed walnuts. It’s given so much sweetest and cosy fall vibes. I also love sprinkle with pumpkin pie spice mix before eating.

Few words about nutrition…

Oats – they are also known us super food. They are incredibly nutritious. Rich in minerals, vitamins, antioxidants and great source of carbs and fibre. You can read more about them here .

Pumpkin Puree – Is rich in vitamins, minerals and antioxidant. Its nutrients help to boost your immune system, protect your eyesight, lower your risk of certain cancer and strength heart. It’s also low in calorie so it a weight loss friendly food.

Coconut milk from can – rich in vitamins, minerals but also rich in fat (so be careful). Anyway the research shows that fat in coconut milk can help you with weight loss because may increase your metabolism. You can read more about it  here .

HOW TO MAKE CREAMY PUMPKIN PORRIDGE WITH CARAMELISED FRUIT

 

INGREDIENTS:

  • 60g oats
  • 50g pumpkin puree
  • 1tbsp coconut thick milk from can
  • 200ml water

Toppings:

METHOD:

Put the oats with water in a sauce pan over medium heat and mix. Cook until start bubbling. Add the pumpkin puree and coconut milk, mix together again. Cook the porridge for few minutes, stirring until it thickens. Pour the porridge into a bowl and decorate with caramelised fruit with fresh berries and crushed walnuts! Sprinkle on top with extra pumpkin pie spices mix. Enjoy!
