Warm, rich and delicious fajita chickpeas stew with fajita sauce served with fajita tortillas are perfect warm and cosy meal for dinner. Note: For this recipe you’ll need two packets of Gluten Free Schwartz FAJITAS.

INGREDIENTS:

Fajita Chickpeas
1 medium onion
2 can chickpeas
2tbsp oil
2tbsp Gluten Free Schwartz FAJITAS
200ml water
salt and pepper
serve with coconut yoghurt and fresh chives

Fajita Sauce
300ml pant based milk
2tbsp coconut yoghurt
11/2 tbsp Gluten Free Schwartz FAJITAS
1tsp curry
2tbsp tomato passata
salt and pepper

Fajita Tortillas
10 mini Gluten Free tortillas
3tbsp oil
3tsp Gluten Free Schwartz FAJITAS

METHOD:
Fajita Chickpeas: Chop the onion. Heat the frying pan with oil and chopped onion until is slight golden. Drain and rinse the chickpeas. Add the chickpeas with fajita to the fried onion and fried few minutes until golden brown, but no burn. Once the fajita chickpeas is ready reduce the heat, add the water and cook with cover about 10 minutes, stirring occasionally. Add salt and pepper according to taste.
Fajita Sauce: Pour the milk to a high container and add the coconut yoghurt, fajita, curry and tomato passata. Mix everything well. Pour the mixture in a small saucepan and cook about 5 minutes. Stir every 1 minutes or so. Add salt and pepper according to taste.
Fajita Tortillas: Add the oil and fajita in a mixing bowl. Heat the frying pan on a high heat about half minute, then reduce the heat. Using brush, marinate one side of tortilla, then place the marinated tortilla in a frying pan. Cook for about half minute per side, flipping it over once.  Use paper towel to wipe up the frying pan after each tortilla. Repeat this process with all tortillas.
